Ingredients
Bowl & Basket Specialty Mahi Mahi Filets, thawed
2 tbs Bowl & Basket Specialty Peri Peri Spice Mix
1 package Bowl & Basket Specialty Creamer Potatoes, cleaned and cut in half
1 red onion
1 zucchini
1 yellow squash, sliced into rounds
1/4 cup Bowl & Basket olive oil
Fresh parsley
Directions

1. Preheat oven to 450 and line a large baking sheet with aluminum foil.

 

2. Place creamer potatoes in a large microwave safe bowl. Add in 2 tbsp of water, then loosely cover. Microwave for 5 minutes or until potatoes are tender.

 

3. Toss potatoes and other vegetables with a few tablespoons of olive oil half the spice mix until well coated, then spread out evenly on the baking sheet.

 

4. Bake for 10 minutes. While vegetables are in the oven, brush mahi mahi filets with a little olive oil and coat with the rest of the spice mix evenly.

 

5. Carefully remove baking sheet from oven and push vegetables to the edges to make room for the fish. Place the mahi mahi filets onto the baking sheet and return the sheet to the oven to bake for 10-15 more minutes, or until the fish is firm and flakes easily.

 

6. Remove from oven, top with fresh parsley and serve!
